1 cup of pitted Dates
1-2 Avocados
1 Lemon, zested and squeezed

  • Soak some organic pitted dates for at least eight hours.
  • Peel and take the seed out of one or more avocados.
  • Finely grate the peel of one lemon, creating lemon zest, and then cut the lemon in half and squeeze the juice into a separate container.
  • Put the avocados, lemon juice and the dates into a blender. (You can use the quantity of lemon juice according to how tart you would like your pudding to be.)
  • When the mixture is blended, stir some of the lemon zest into it and put servings of it into dessert bowls. Sprinkle some of the lemon zest on top of each serving.
  • Put it in the fridge, to be served as a dessert after your meal.
