Zesty Give Me More!

A simple and easy creation from Tania, a raw food lover from London. This nutritious and delicious treat – a pink grapefruit salad – is something you can easily fit into everyday life.
Tania says: “You can eat this alone or with crackers, or stuff the mixture inside lettuce or cabbage leaves. I love pink grapefruit and it is a kind of novelty for me. The first time I tried it a few years ago it didn’t ring my bell, but slowly I started to welcome it in my kitchen. As I was preparing this salad I had the idea to add the grapefruit and I’m so pleased with the result…it tastes sooo good!! Try!”

Serves 2

  • 1 pink grapefruit (peeled and cut in small pieces
  • Half a lime
  • A handful of sprouted buckwheat (sprouted quinoa is good too)
  • A few leaves of: mint, coriander, parsley and Thai basil (or Italian)
  • 2 spring onions finely sliced
  • A small piece of cucumber (skin optional)
  • 3-4 broccoli florets chopped to small pieces
  • A handful of celery, thinly sliced
  • Half an apple (Pink Lady juice and sweet or equivalent), sliced thinly and chopped in small pieces
  • Mix all the ingredients together then add the dressing

DRESSING

  • 1 juicy lime
  • Half a tsp of wasabi (or more if you like it)
  • Drizzle of extra virgin olive oil
  • A pinch of sea salt
