Raw chef Niten shares a delicious recipe from his raw kitchen, to surprise and delight you as to the possibilities of raw food. This month: Stuffed Courgettes.
Stuffed Courgettes (serves 6)
6 medium Courgettes
3 mediucm Carrots
1 cup of Soaked Walnuts
Half a cup of Soaked Cashews
Half a cup of Soaked Almonds
A handful of Parsley
1 tsp Beer Yeast Flakes
2-3 tsps Tamari or Shoyu
1 tsp Lemon juice
- Put all nuts, parsley, yeast, tamari and lemon juice in food processor
- Blend together
- Change blade of food processor and grate carrots
- Cut the courgettes length wise
- Empty the flesh
- Use half the amount of flesh in food processor
- Add grated carrots and nut paste
- Blend everything together
- Stuff empty courgettes with this mix
- Garnish with chopped scallions or fresh coriander
